Chicory Root, Cichorium intybus  ~Not roasted

We are proud to be one of the only certified organic US growers of Chicory Root—most of what you see on the market is imported.This plant is part of the Asteraceae family, Chicory is a relative of Dandelion. Like Dandelion, it is traditionally used in many spring tonic recipes. When roasted, it is wonderful as a coffee substitute. Try roasting it yourself! Arrange the Chicory Roots on a shallow baking sheet and place it in the oven. Toast  at 350° until the color changes to golden brown and there is a coffee-like smell. Try grinding some Chicory Root with coffee beans or use as a stand-alone coffee substitute—brew as you would coffee. Enjoy in good health.
